Rustic Red Potato Salad (GF) (V)

Who doesn't love potato salad? This one is a bit different than what many of us
may be used to. It has a tangy flavor from a few ingredients. Make it a day
ahead and let the flavors come together.

Instructions

1 Cut the potatoes into bite size pieces. 1"- 1 1½"
2 Steam the potatoes over a double boiler for 20-25 minutes. Potatoes should be
fork tender.
3 Spread the potatoes on a sheet pan an chill in the refrigerator until cold.
4 Cut the scallion, celery and roasted red pepper into ¼" dice.
5 In a bowl, combine the mayonnaise, grain mustard, sweet pickle relish, kosher
salt, celery salt, & white pepper.
6 To the dressing add the scallions, roasted red pepper and celery. Mix to
combine.
7 Add the steamed and cooled red potatoes. Fold the potatoes into the dressing.
8 Adjust seasoning of the potato salad as you like. Enjoy!
