Instructions

1 Preheat the oven to 425F. Remove the flaky outer layers of the garlic head. Use
a sharp knife to cut off the top of the garlic head, being careful not to cut
too deep, but getting the majority of the cloves sliced so that the insides are
visible. Place the garlic head in foil and drizzle on some olive oil. Wrap the
foil around the garlic head and roast in the oven for about 40 minutes or until
the garlic is golden-brown and soft.
2 Carefully remove the garlic and let cool. Once cool enough to touch, unwrap the
foil. Pinch each clove out using your fingers.
3 Add the roasted garlic, white beans, artichokes, tahini, lemon juice, olive oil,
and salt to a food processor and blend on high for about a minute, or until the
dip is smooth and even.
4 Use your hands to crumble in the half block of vegan feta. Blend on low for
10-20 seconds.
5 Scoop the dip into a serving dish and take a spoon just up to the edge and trace
the outer layer of the dish. Drizzle olive oil on top of the dip so it can pour
into the shallow areas you just created.
6 Garnish with chopped parsley, ground sumac, fresh lemon juice and more crumbled
feta, if desired.
7 Serve with carrots, celery, peppers, and pita bread, or choose from anything
listed in the blog post above!
