Mango Curry Chicken

This recipe takes a whole roaster chicken, breaks it down and slowly roasts it
with onions, garlic, peppers, fresh ginger, and of course mango with a generous
splash of lime.  The spice is easily adjusted per your tastes.  This is a great
recipe to make for entertaining as it's even better the next day.  Prepare it
the day before, and rewarm before serving.
