🧂 Ingredients

20 Chicken Wings

10 flats and 10 drumettes
2 tsp Baking Powder
1 tsp Salt
2 tbsp Sriracha

this Thai hot chili sauce is a great way to add spice AND a bit of fruitiness to a dish.
2 tbsp Honey

I'm using acacia honey but it really doesn't matter so you can use whatever honey you like. I would recommend using REAL honey though, since there's a bit of an issue with fake honey permeating grocery store shelves these days.
2 tsp Soy Sauce
1 tsp Worcestershire Sauce
2 cloves Garlic

minced
1 tsp Sesame Seeds

optional, for garnish

1 Place the segmented chicken wings in a bowl and sprinkle over the baking powder
and salt. Toss the bowl so the baking powder gets all over the wings. Then place
the wings directly on an oven rack. Do not let them touch.
2 Place the rack in an oven preheated to 120c or 250f for 30 minutes. Make sure
there is a tray beneath the rack to catch the drippings.
3 After 30 minutes raise the temperature to 220c or 425f and bake for another
30-40 minutes.
4 Remove the rack and take the wings off. Place them in a bowl with the sauce and
toss to coat. Sprinkle with the sesame seeds and serve with some carrot and
celery sticks.
5 Add all ingredients to a bowl and whisk to combine.
