Instructions

1 Place the halved and scored eggplants on a baking tray. Drizzle generously with
olive oil, then sprinkle over the salt and black pepper.
2 Place tray into an oven preheated to 175c or 250f for 12-15 minutes, or until
the tops begin to blacken.
3 While the eggplant is roasting in the oven you can make the tahini yogurt sauce.
In a bowl just whisk together all of the ingredients until a smooth consistency.
If it is not as thin as you would like, add a tbsp of water at a time until you
get the desired consistency.
4 Plate the eggplant half and drizzle over about a tbsp of the tahini yogurt
sauce. Spoon over some chopped fresh tomato and a sprinkling of sumac to taste.
