
Mangalorean Christmas Special Pork Indad
Pork Indad is the most popular traditional centrepiece, of a Mangalorean
Catholic Christmas dinner. It is also a rich winter warmer dish with a perfect
balance of flavours from the spices, tang from vinegar, sweetness from sultanas
and a kick of brandy at the end. Serve with sannas (steamed rice and lentil
