Ham and Mushroom Chilli Pasta

This is a delicious tomato-based ham and mushroom chilli pasta with fettuccine
that is highly satisfying both for lunch and dinner. If you want to eat a
restaurant style pasta at home, this will fit the bill perfectly. It's delish!!!

Instructions

1 Cook fettuccine according to packet instructions in plenty of salted water.
Drain immediately and drizzle with olive oil, separate the ribbons and set
aside.
2 While the pasta is cooking, to make the sauce, heat oil on medium in a wok and
add garlic. Let it sizzle till light brown and then add onion and tomato. Fry
for 4 minutes stirring from time to time.
3 Add ham and mushrooms and cook till mushrooms are just beginning to soften
(about 3 minutes).
4 Add chilli powder/chilli flakes, salt, thyme, parsley and mix well.
5 Stir through cooked fettuccine into this hot sauce and toss it continuously till
pasta warms up. This should take about 2 to 3 minutes. Season to taste. Do not
overheat pasta.
6 Remove from heat and serve immediately garnished with remaining parsley and a
drizzle of extra virgin olive oil. Enjoy!
