Bakery Style Chocolate Buns

🧂 Ingredients
1 Cup
Water,
at room temperature
½ Cup
Milk of choice,
at room temperature
3 tbsp
Melted butter
¼ Cup
Honey
1 Tbsp
Instant Yeast
4 Cups
Bread Flout
If you don't have bread flour, All-Purpose is fine.
3 Tbsp
Granulated Sugar
1½ tsp
Kosher salt
6 Tbsp
Butter
at room temperature, make sure it is very soft
½ Cup
Brown Sugar
2 Tbsp
Cocoa Powder
1 tsp
Ground Cinnamon
1 tsp
Vanilla extract
½ Cup
Chocolate chips or chopped chocolate pieces
to sprinkle on top of the chocolate filling. Optional

Instructions

In the bowl of your stand mixer, combine all of the ingredients together.

Using your dough hook, turn the mixer on medium-high speed until the dough comes
together and barely sticks to the side, about 10-15 minutes. (if the dough is
still sticking to the sides a lot after about 10 minutes, add in 1/4 cup more
flour at a time until the dough pulls away from the sides of the bowl and is
only slightly sticky to the touch.)

Once the dough pulls away from the sides mostly, transfer to a clean bowl,
cover, then let rise on your counter for 45 minutes. (the dough will still be
sticky)

In a medium bowl, whip the softened butter for the chocolate spread.

Once the butter is soft, add in the brown sugar, cocoa powder, cinnamon, and
vanilla.

Mix until all combined and smooth. Set aside on the counter until ready to use.

Once the dough has risen on the counter, it is time to shape your buns.

On a well floured surface, roll the dough out to around 10"x16".

Shape the buns according to your desired shape (see all the different variations
above). I will walk you through shaping knots here.

Spread the chocolate filling evenly over the dough.

If using, sprinkle evenly on the chocolate chips over the dough.

Fold the dough in thirds like a letter, bringing the top half town to the
middle, then bringing the bottom half over that.

Using a pizza cutter, cut the dough into 1½"-2" pieces. (reference how to photos
in shaping section above)

Cut two slices in each piece, leaving the top intact.

Braid the dough pieces together.

Starting at the point where the dough is still connected, roll the dough down so
that it forms a ball.

Place in a prepared baking sheet or muffin tin.

Repeat with the remaining pieces.

Let the buns rise on your counter for 30 minutes. (if doing the make ahead
option, cover and place in your refrigerator at this point)

Once the dough has risen, preheat your oven to 350℉.

Brush the buns with either milk or an egg wash.

Place a baking sheet under the pan you are baking with, just incase there is any
chocolate leakage.

Bake for 20 – 25 minutes.
