Cranberry & Roasted Cashew Energy Balls

Instructions

1 1. Using a blender add all the cashews and blend a grainy consistency. Be sure
not to blend into nut butter.
2 2. Add in the remaining ingredients (except for the white chocolate and coconut
oil) and blend for about 20 seconds, until the mixture can clump nicely
together.
3 3. Line a baking tray or plate with baking paper.
4 4. Roll the mixture into your desired shape and place it on the tray.
5 5. Set in the fridge for about 5 minutes.
6 6. While the balls are setting, melt the white chocolate with coconut oil in the
microwave or over the stovetop.
7 7. Once the balls have set, drizzle the white chocolate and coconut oil mixture
over each ball.
8 8. Set in the fridge for a further 5 mins. Enjoy!
