heirloom tomatoes on crunchy baguette.

Tofu Sandwich caprese heirloom tomato

🧂 Ingredients

1 Drain and press the tofu. Slice the block into ½-inch rectangles. Place each
piece in a large shallow dish.
2 Combine the oil, balsamic, pepper and salt in a small bowl or measuring cup. Mix
well and pour over top of the tofu. Let the tofu marinate for 20-30 minutes.
3 Slice the baguette in half lengthwise. Slice across the width to create 6-inch
sandwiches. Toast each slice to desired crispiness.
4 Slice open the avocado and remove the pit. Spread avocado (if using) onto one
half of each sandwich. Add 1-2 pieces of marinated tofu to each sandwich.
5 Slice the tomato into halves and top the tofu with tomatoes and fresh basil.
Drizzle extra marinade on top if desired.
