medjool dates
(pitted)
1/4 cup
peanut butter
(or any nut, seed butter)
1.5 cups
chocolate chips
1 tbsp
coconut oil
sea salt
(for topping)

Instructions

Remove pits from the dates.

Add pitted dates to a bowl or cup and add hot water to soften. Let soak 10 min
and drain water.

Add dates and peanut butter to a blender or food processor and mix until fully
combined. If mixture is too sticky, set in the freezer to firm.

Add chocolate and coconut oil to a bowl and microwave for 30 sec, stir, and
repeat until melted and smooth.

Add liners to a mini muffin pan (or use a silicone pan) and add a small amount
of chocolate to the bottom of each cup , spreading some up on the sides.

Add a small spoonful of date peanut butter mixture on top of the chocolate.

Add more chocolate on top of each cup. Option to add sea salt on top.

Freeze for at least 2 hours. Enjoy!
