Some alternatives for you….

*use store bought pickled white raddish and carrots instead of preserved mustard
greens (the ones used commonly in Vietnamese food)

*use pressed tofu instead of chicken and konjac or mung bean noodles instead of
jellyfish to make it vegetarian

*You can use a whole chicken, chicken legs or turkey

*add pomelo and/or grapefruit to add a slight zing

*use chips or something crunchy to replace deep-fried spring roll wrappers

*add nuts, Asian pear, lettuce, or cucumbers
