Shredded Chicken Salad 味菜手撕雞 wèi cài shǒu sī jī is a must, must try!  I can’t imagine anyone who wouldn’t love this dish! Some alternatives for you…. *use store bought pickled white raddish and carrots instead of preserved mustard greens (the ones used commonly in Vietnamese food) *use pressed tofu instead of chicken and konjac or mung bean noodles instead of jellyfish to make it vegetarian *You can use a whole chicken, chicken legs or turkey *add pomelo and/or grapefruit to add a slight zing *use chips or something crunchy to replace deep-fried spring roll wrappers *add nuts, Asian pear, lettuce, or cucumbers *add peanut butter or sesame paste and/or chili sauce to make bang bang chicken The possibilities are endless!
