Instructions

1 Preheat the oven to 350°. Grease two 8x4-inch loaf pans
2 Combine the flour, salt, baking powder, baking soda, and ground cinnamon in a
medium bowl and set aside.
3 Mix the butter, sugars, vanilla and beaten eggs together in a large bowl until
combined.
4 Stir the flour mixture into the wet mixture until just combined and then add the
shredded zucchini.
5 Pour the batter into the greased loaf pans and bake for 55-60 minutes or until a
toothpick inserted in the center comes out clean.
6 Let cool completely (about 15 minutes) before removing it from the pans and
placing it on a wire rack.
