large potatoes, washed, peeled and sliced
3 tablespoons
olive oil

chicken breasts, sliced and cubed
1
large onion, peeled and sliced into large pieces

strips thick cut bacon, cubed
1
clove(s) garlic, crushed

eggs
Salt and pepper, to taste
Splash of red wine (optional)

Instructions

Heat the oven to 400°. Steam the sliced potatoes until fork-soft.

Heat the olive oil in an oven-safe sauté pan and add the chicken pieces. Cook
for a few minutes, then add the onion, bacon, garlic, salt, pepper and wine (if
using) and stir to combine. Add the potatoes to the pan and stir.

Place the pan, uncovered, in the oven for about 12 minutes. Meanwhile, fry the
eggs to over-easy and set aside.

Remove the pan from the oven, scoop out portions onto plates and place 1 fried
egg atop each serving. Serve with a fresh green salad, if desired.
