Easter Apostle Simnel Cake
Simnel cake is the fruity, spiced cake that is sandwiched between two layers of
marzipan. Traditionally served on Mothering Sunday, eventually came to be called
as Easter Cake. In the late Victorian times, 11 apostles were added on the top
of the cake, representing Christ's eleven apostles. Number 12 would be Judas and
he was excluded because of his betrayal.
