Instructions

1 Cook bacon in a skillet until crispy. Remove and drain. Crumble
2 Season beef with salt and pepper and add to skillet. Cook until browned on all
sides. Add beef to crockpot.
3 Add crumbled bacon, carrot, onion, flour, beef broth, tomato paste, garlic,
thyme and bay leaf to crockpot. Stir to combine all ingredients. Season with
salt and pepper.
4 Cover and cook on low for 8-10 hours.
5 About an hour before serving, sauté mushrooms in 2 tablespoons butter until
browned. Add to crockpot along with red wine.
6 Cook one hour longer then serve.
