220 grams Tuna

2 tins
50 grams Breadcrumbs
3 Eggs
1.5 tbsp Lemon Juice
0.5 tsp Paprika
Pinch of Salt
More Breadcrumbs

Instructions

1 Preheat the oven to 200ºC.
2 In a bowl combine the drained Tuna, 50g Breadcrumbs, Eggs, Lemon Juice, Paprika
& Salt. Mix to fully combine. The mix should be sticky and hold together well.
3 Take a tablespoon measure and scoop out portions of the tuna mix, using your
hands to roll them You should get about 15 nuggets. Roll them slightly fatter
than you want them to end up as they will flatten as you coat them.
4 Pour Breadcrumbs in a dish and place nuggets into the breadcrumbs covering with
the breadcrumbs and gentle press down so they stick. If you wish you can flip
them and repeat – be gentle as you do not want them to fall apart.
5 Place the breaded nuggets onto a baking tray lined with parchment and bake in
the oven for 30 mins turning halfway through.
