🧂 Ingredients

medjool dates
(pitted)
3-4 scoops
protein powder
(1/3 cup + 1/4 cup)
1/4 cup
peanut butter
(or nut/seed butter of choice)
almond milk
(as needed)
1 pinch
sea salt
1/2 cup
roasted unsalted peanuts

Instructions

Line a tray or large plate with parchment paper.

Remove pits from dates.

Add dates, 1/3 cup protein powder, peanut butter, salt and a splash of almond
milk to a blender or food processor. Blend until a dough forms. Add more milk a
little at a time until everything is mixed and smooth.

Transfer to a bowl. Add 1/4 cup protein powder (or more) until you reach a
dough-like consistency. Dough will still be slightly sticky.

Lightly wet your fingers with water to help with stickiness of the batter and
form the dough into bar shapes.

Add peanuts to a small plate and roll each bar into the peanuts.

Place the finished bar on the parchment lined tray and repeat until all dough is
used.

Set in the freezer for at least 30min-2 hours or until the bars have hardened.

Let thaw for a few minutes and enjoy!
