Curry Spiced Chicken with Couscous and Broccoli

cut into bite-sized pieces

Curry Powder

Garlic Powder
1 tsp
Cayenne Pepper
1 tbsp
Extra Virgin Olive Oil

Pearl Couscous
(about 150 grams)

Cream Cheese
1 head
Broccoli
cut into small florettes (about 275 grams)
1 cup

sliced thin, (about 75 grams)

Instructions

Start by heating a large stovetop pan to medium heat.

While the pan is heating, chop up your chicken and broccoli.

Season your chicken with 3/4's of the curry, garlic, and cayenne. The rest will
be added towards the end.

Once your pan is hot add your oil to the pan, then add your chopped chicken.
Spread your chicken out into an even layer and allow to cook for 3-5 minutes,
until that side is golden brown.

After 3-5 minutes, toss your chicken in the pan and continue cooking for another
2 minutes tossing often. Your chicken will not be full cooked at this point.

Now add 2 cups water and 1 cup couscous to the pan. Turn the heat up so that
your water begins to boil. Cook the chicken with the couscous for 5 minutes.
Stirring every 2 minutes or so.

After about 5 minutes most of the water should be absorbed into the couscous.
Now add the additional cup of water and the cream cheese to the pan. Stir
everything together for 1 minute until well incorporated and the cheese begins
to melt.

Now add the broccoli to the pan, spreading the broccoli out on top of the other
ingredients. No need to mix the broccoli in just yet. This allows the broccoli
to sort of steam on top. Turn the heat down to medium-low and cover with a lid.
Cook for 6 minutes.

After 6 minutes remove the lid, season with the remaining curry, garlic, and
cayenne, and season to taste with a tiny bit of black pepper and salt. Then add
the sliced red onions. Stir everything together. By now your broccoli should be
just about done.
(I like my broccoli to still have some crips to it, not mushy)

Cover with the lid and cook for another 1-2 minutes. Stirring every 30 seconds
to prevent burning. After 2 minutes the dish is done. Serve and enjoy!
