4 pieces
5-6 ounces each salmon, pin bones removed
Pinch
of salt and pepper
1 ½ cup
basil
1/3 cup
pine nuts
1 clove
garlic
¼ teaspoon
salt
Juice of 1/2 lemon
1/3 cup
extra virgin olive oil

Preheat oven to 450 degrees F. Line a baking sheet with parchment paper and
place salmon, skin side down, on lined baking sheet. Season salmon with salt and
pepper. Place in oven and roast for 12 to 15 minutes until cooked to desired
doneness.

While salmon is cooking, add the basil, nuts, garlic, salt, and lemon juice into
a food processor. Process until coarsely ground. In a steady stream, add the oil
and continue to process.

Serve pesto on the salmon or on the side.
