Instructions

1 Heat the vegetable oil in a saucepan. Fry the potatoes for a minute or two,
evenly on both sides. Take the potatoes out and set aside.
2 With the remaining oil, sauté the celery, onion, garlic, and ginger.
3 Add the chicken. Sauté until brown. Flip the chicken pieces so that both sides
are cooked.
4 Add a tablespoon of fish sauce.
5 Pour in the coconut milk and bring the mixture to a boil.
6 Add the curry powder and cook until the mixture reduces to half the size.
7 Add the red bell pepper and fried potatoes. Cook for 5-10 minutes.
