honey

1 teaspoon

1 teaspoon
garlic powder
½ teaspoon
red pepper flakes if you like a little heat
¼ teaspoon
black pepper
Bowl Filling:
4 cups
romaine lettuce shredded
2 cups
cherry tomatoes cut in halves
2 cups
cucumber diced
2 cups
white rice cooked
1 cup
red onion thinly sliced
½ cup
feta optional
Tzatziki Sauce:
1 cup
plain greek yogurt or low fat sour cream
½ cup
cucumber grated
1 tablespoon
fresh dill finely chopped
1 tablespoon
olive oil
1 tablespoon
lemon juice
1 teaspoon
minced garlic
¼ teaspoon
salt to taste

Instructions

Whisk together all ingredients for the chicken marinade.

Pound the chicken to about ½ inch thick and add to a shallow bowl or ziplock bag
with the marinade.

Let marinate for at least 30 minutes, or up to a few hours.

Meanwhile, combine all ingredients for the tzatziki and set aside.

Prep the rice and veggies.

After the chicken has finished marinating, set your air fryer to 380°F. Cook the
chicken for about 7 minutes on one side, then flip and cook for another 3-4
minutes, or until it reaches an internal temperature of 165°F.

If you don’t have an air fryer, heat a skillet with some oil or butter over
medium-low heat. Fry the chicken for 7-8 minutes on one side, then flip and
continue cooking until golden brown and the internal temperature hits 165°F.

Once cooked, allow the chicken to rest for 5 minutes before slicing.

To assemble your bowls, start with rice, add veggies, and top with the sliced
chicken and tzatziki. I love to finish mine with a drizzle of olive oil and
lemon juice, or you can use my lemon tahini dressing for extra flavor. Enjoy!
