🧂 Ingredients

2 large artichokes
1/4 cup mayonnaise
¼ cup plain Greek yogurt
2 tablespoons chopped fresh herbs

such as chives and/or parsley
1 teaspoon lemon juice
1 teaspoon Dijon mustard
1 small clove garlic

grated
Pinch of salt
Pinch of ground pepper

Instructions

1 Cut stem off and trim about 1 inch off the tip of the artichokes with kitchen
shears.
2 Place 1 cup of cold water and a steamer rack in the Instant Pot pressure cooker.
Place 2 whole artichokes on the steamer rack, and close the lid.
3 Pressure cook on High Pressure for 8 minutes (using the Manual Button/Pressure
Cook + Quick Release).
4 While the artichokes are cooking, whisk Aioli ingredients together.
5 Serve artichokes with aioli.
