🧂 Ingredients

1 can creamed corn
1 can whole kernel corn, drained
1 package Jiffy corn muffin mix
9 tbsp butter

8 are used in recipe, 1 tbsp is used to grease the dish
2 whole eggs, beaten
1 cup sour cream
1 whole jalapeno, finely minced
1/2 cup grated sharp cheddar cheese

Instructions

1 Combine the cans of corn, muffin mix, and melted butter together. Add sour
cream, and eggs beat with a whisk. Fold in grated cheese, and minced jalapeno.
Pour batter into buttered baking dish. 11×7 or 9 inch round works well. Bake at
375 degrees for 1 hour or until middle is firm and top is lightly browned. Let
sit for 10-15 minutes before serving.
