The morning medley muffin is the all in one muffin. It mantains a sweetness all
throughout, even without any added sugar. There is always something yummy to be
had in every bite!

Instructions

1 Preheat the oven to 350 degrees Fahrenheit.
2 In a large mixing bowl combine the softened butter and applesauce. Whisk in the
2 eggs and shredded carrot.
3 In a separate bowl, combine the dry ingredients – flour, cinnamon, ground
cloves, ginger and baking soda.
4 Dump the dry ingredients into the wet ingredients and mix until well combined.
With a spatula or spoon, stir in the chopped walnuts, diced apples and raisins.
5 Line 12 muffin tins with liners or grease them well. Spoon the muffin batter
about 2/3 full.
6 Bake in the oven for 20-25 minutes or until toothpick inserted in the middle
comes out clean.
7 Let the muffins sit for 5 minutes before taking out of muffin tins.
8 Enjoy warm with a pad of butter or store in an airtight container in the
refrigerator for 3-5 days.
