🧂 Ingredients

5-7 pound leg of lamb, bone in
2 tablespoons yellow mustard
1 tablespoon kosher salt
2 teaspoons black pepper
1 teaspoon granulated garlic (not powder)
1 teaspoon thyme
1 teaspoon rosemary
1 teaspoon brown sugar
1/2 teaspoon paprika

Instructions

1 When ready to cook, set your pellet grill to 250 °F and preheat.
2 In a small bowl, combine the salt, pepper, garlic, thyme, rosemary, sugar, and
paprika.
3 Trim off any large pieces of fat or silver skin.
4 Spread a thin layer of mustard over the lamb and rub the lamb herb rub evenly
all over the meat.
5 Place the lamb in the smoker. Smoke for 4 hours or until the internal
temperature of the meat reaches 150 °F.
