🧂 Ingredients

4 sandwich rolls

toasted
4 eggs
4 slices mozzarella or other cheese
8 slices mortadella
pesto sauce
arugula

Instructions

1 Toast the cut sides of the rolls and spread with a little pesto. Add the cheese.
In a skillet over medium high heat, fry the 8 slices of mortadella until
slightly crispy, then place 2 on each roll. Wipe the pan and reheat with a
little oil. Fry 4 eggs sprinkled with salt to your preferred doneness. I did
them with runny yolks.

Add the eggs to the sandwiches and top with some pesto and arugula. Serve with
extra pesto.
