
Salad w/ Wine Poached Salmon, Lentils, & Spinach
I am a huge fan of classic Ethiopian meals. I greatly miss my favorite Ethiopian
restaurant back home. But there is something to be said for taking those flavor
profiles that you adore and turning them into fun and interesting meals. This
Ethiopian salmon recipe is a perfect combination of red lentils and sautéed
spinach with a citrusy white wine poached salmon and cherry tomatoes. It might
not be traditional, but it's what I have on hand and absolutely delicious! Hands
down one of my best recipes this season.
