View RecipeThis calabaza squash lentil recipe is a simplified take on Ethiopian Misir Wat with readily available ingredients that I actually have on hand. Misir Wat is an Ethiopian-style red lentil dish that ordinarily contains niter kibbeh, onions, tomatoes, and berbere. I am plum out of tomatoes, but do have the vast majority of spices that go into berbere and have seasoned this dish with calabaza squash, habaneros, garlic, turmeric, red onions, coconut oil, red lentils, cloves, coriander, cumin, fenugreek, salt, and pepper.
View RecipeA lentil burrito is the perfect substitute for refried or black beans when you're on the go. Add a little egg and banana for a breakfast kick. This all came about when I made a fun Salad w/ Black Lentils, Hardboiled Eggs, & Tomatoes [https://catfishoutofwater.com/salad-w-black-lentils-hardboiled-eggs-tomatoes/]. Never one to waste an opportunity to turn something that maybe shouldn't be into a burrito! I noticed the bananas on my counter and thought, that's the perfect sweet and savory addition. The savory berbere spice blend pairs incredibly well with the sweetness of the bananas and the robustness of the black lentils. I always like to add a little spicy kick of hot sauce. But this kind of recipe just goes to show that, you just need to go for it and experiment with what you have on hand. Sometimes it works out incredibly well!

View RecipeI am a huge fan of classic Ethiopian meals. I greatly miss my favorite Ethiopian restaurant back home. But there is something to be said for taking those flavor profiles that you adore and turning them into fun and interesting meals. This Ethiopian salmon recipe is a perfect combination of red lentils and sautéed spinach with a citrusy white wine poached salmon and cherry tomatoes. It might not be traditional, but it's what I have on hand and absolutely delicious! Hands down one of my best recipes this season.
View RecipeSautéed spinach is a take on Ethiopian Gomen Wat, with spinach instead of collard greens. Both because I prefer the taste and have more of them readily available! Feel free to substitute your leafy green of choice and adjust the seasonings to taste to make it your own. It's more about the spice blend and method of cooking than the exact lettuce.
