🧂 Ingredients
1 cup
cottage cheese
2 tbsp
maple syrup
(or sweetener of choice)
1 tsp
vanilla extract
1 cup
almond flour
1/3 cup
vanilla protein powder
(heaping cup)
1/4 cup
pumpkin puree
1/4 cup
chocolate chips
1 tsp
pumpkin pie spice

Instructions

Add cottage cheese, pumpkin puree, maple syrup, and vanilla to a high speed
blender or food processor. Blend until smooth.

Pour into a large mixing bowl and add almond flour, protein powder, and pumpkin
pie spice. Stir until combined and cookie dough consistency.

Fold in chocolate chips.

Set in fridge for 1 hour for a thicker (and better) cookie dough consistency.
