Cold Noodle Bowls with Leftover Turkey

your Thanksgiving leftovers!

Instructions

1 Prepare the ingredients for the dressing. In a small bowl, whisk together the
lime juice, gochujang, sesame oil, maple syrup, soy sauce, and ginger. Set aside
for now.
2 Cook the rice noodles according to package instructions. Drain and rinse with
cold water.
3 Meanwhile, in a large mixing bowl, combine turkey, mango, cucumber, avocado,
cilantro, and peanuts.
4 Add the noodles to the bowl and pour the dressing over the top. Toss the
ingredients to coat evenly in the dressing.
5 Portion into bowls and serve cold. Enjoy!
