🧂 Ingredients

1 medium onion (chopped)
2 garlic cloves (smashed)
1/2 tsp (.5g) dried oregano
2/3 cup (158ml) chicken broth
27 oz (796ml) 1 can tomatoes
2 tbsp (30ml) extra virgin olive oil
1 tsp ( 4g) sugar
1 cup (237ml) heavy cream (at least 18 milk fat)
Salt & pepper to taste (preferably white pepper)

Instructions

1 Heat a medium sized pot over medium-low heat.
2 Dice onions and add 2 tbsp olive oil to the pot. Add onions & cook until soft &
translucent, about 5 minutes.
3 Peel & crush garlic & add to the pot. Cook for 2 minutes until fragrant. Do not
allow the garlic to brown.
4 Add dried oregano and stir well.
5 Add broth and tomatoes to the pot and bring to a boil. Turn down the heat to
medium & simmer for 5 minutes
6 Add sugar & stir well.
7 Using an immersion blender (or regular blender) blend the tomato mixture until
very smooth.
8 Add the cream & cook over low heat until soup is hot. Do not allow it to come to
a boil.
9 Season with salt & pepper and serve.
