Instant Pot Swedish Meatballs {Ikea Copycat}

🧂 Ingredients

• 1 lb extra-lean ground beef
• 1/2 cup breadcrumbs
• 1 egg
• 1 tbsp Dijon mustard
• 1 tsp garlic powder
• 1 tsp onion powder
• 1/2 tsp each salt & pepper
• 1/4 tsp allspice or nutmeg
• 3 tbsp butter
• 3 tbsp flour
• 1 1/2 cups beef broth
• 1/2 cup sour cream

Instructions

• 1 Mix together the ingredients for the meatballs in a large bowl. Roll each
  meatball into 1-inch balls.
• 2 Add 1 tbsp olive oil to the bottom of Instant Pot. Saute meatballs for 5 minutes
  to get a light browning on them. Add beef broth, then place lid on Instant Pot
  and make sure valve is set to seal. Press the pressure cook button and set to
  high, then cook for 3 minutes. Instant Pot will take about 5-10 minutes to come
  to pressure then pressure cook for 3 minutes.
• 3 Do a quick release of the pressure on the Instant Pot by flicking the switch at
  the top with a spoon. Open the lid when pressure gauge has dropped and the lid
  opens easily.
• 4 Remove meatballs from Instant Pot, and pour broth into a small bowl and set
  aside.
• 5 Turn Instant Pot back to saute mode. Melt butter, then add flour, whisking until
  smooth. Add broth back to pot, then bring to a boil. Stir in sour cream. Pour
  sauce over meatballs, then garnish with parsley. Serve and enjoy!
