Simple Spelt Muffins

Freshly milled with spelt this apple cinnamon muffin is everything you want.

Muffins spelt freshly milled ancient grain

Instructions

1 Preheat oven to 400 degrees.
2 Grind 3 cups of spelt berries in a large bowl. Measure out 4.5 cups of freshly
milled flour. Add baking powder, baking soda, salt, and cinnamon to the bowl and
whisk until combined
3 Add melted butter, egg, buttermilk, and vanilla. Mix until combined.
4 Peel apples and grate with a cheese grater. Fold in apple shreds.
5 Line muffin tin with cupcake liners. Fill each one to the rim with batter.
6 Bake for 20-23 minutes.
