Ethiopian Butter
Our spiced butter, called niter kebbeh, at the Ethiopian restaurant I worked at
absolutely required four things (other than butter): minced shallots, toasted
cardamom, fenugreek and turmeric. Oh, and one other thing â time. Slow cooking
is essential to this concoction.
