Viral TikTok Breakfast Sandwich

This viral TikTok breakfast sandwich took social media by storm over the last
couple years and it is WORTH THE HYPE. It is made in one pan, can be made on any
bread to meet any dietary need, and the filling options are endless. This is the
tastiest, easiest, healthy-ish breakfast!

🧂 Ingredients

2 slices sturdy bread of choice
3 eggs
seasonings, of choice
2-ish tbsp pesto
1 slice cheese, of choice

*use dairy-free if needed!
arugula or spinach
freshly sliced tomato
or whatever fillings you'd like!

Instructions

1 Start by preparing your eggs. In a bowl, whisk together the eggs until super
smooth. Add seasonings of choice, then whisk again. If using pesto, spread a
layer of it over two slices of bread.
2 Add a little butter, ghee, or oil to a pan over medium heat. Once heated, add
the eggs. Quickly place each piece of bread into the eggs (see video).
3 If you're not using pesto, you'll want to flip each slice of bread to the other
side, to ensure both sides are coated in the wet egg mixture before it cooks
(much like fresh toast). This is to ensure the other side of the bread will get
crisp on the pan.
4 Once the eggs are cooked through, carefully flip the entire thing over. Fold the
edges of the eggs that are hanging over the bread into the center. Place a slice
of cheese over one of the slices of bread. Then the fillings (arugula, tomato,
etc). Flip the other slice of bread onto it, to form the sandwich. Enjoy!
