Maple Bacon Pancake Bites

Maple and bacon wrapped up in a perfect little bite. The maple bacon pancake
bites are a wonderful way to start your morning.

🧂 Ingredients

1 Preheat oven to 425 degrees.
2 Prepare pancake mix according to box instructions. I used Hungry Jack light and
fluffy so it was 2 cups mix and 1 1/2 cups water.
3 Grease two mini cupcake pans and fill each cup 2/3 full of the pancake batter.
4 Bake for 10-12 minutes until a toothpick inserted in the center comes out clean.
5 Set the pancake bites on a cooling rack to cool once they are baked.
6 Using a hand mixer, combine the cream cheese, sugar, and maple syrup.
7 Once the pancake bites are completely cooled, dip or spread the icing onto the
bites.
8 Fry the bacon until cooked through and chop into fine pieces. Set aside.
9 Top with bacon crumbles and serve. Any leftovers should be kept in the
refrigerator.
