600 g
Chicken
Three chicken thighs, each weighing about 200g
4-5 cloves

Wash the chicken thighs. Remove any excess moisture from the chicken by patting
them with a paper towel.

Peel the shallot, garlic, and ginger. Then, chop them roughly. You will need
larger chunks of spices for this recipe. Then, slice the pepper and scallion.

Prepare other spices, such as bay leaves, cinnamon, star anise, and sugar in
another bowl.

Take 6 tbsp light soy sauce in a bowl. Add 1 tbsp dark soy sauce, 6 tbsp rice
wine, 1 tbsp oyster sauce, and 1 tsp of ground pepper to it. Mix everything well
and keep aside.

Put oil in a pan. When the oil gets hot, put in the shallot, ginger, and garlic.
Fry the spices until they get fragrant.

Then, add the chicken thighs. Sear the chicken thighs on both sides over
medium-low heat. You should see some nice colors on the chicken.

Pour your pre-made sauce mix over the chicken. Add the remaining spices, and the
sugar to the pan. Also, add small bowls of water. Mix everything, turn the heat
to low, and cover with the lid. Simmer it for about 15 minutes. In the middle,
turn the chicken thighs over once.

Open the lid after 15 minutes and turn the heat to high. Baste the chicken for a
few minutes to moisten it further. Then, take the chicken off and let it cool
down.

Once the chicken is cooled, shred the meat. Put the hand-torn meat on a plate.
Don’t forget the sauce. It is super rich in flavor and aroma. Drizzle the sauce
over the shredded chicken and garnish it with scallions. Juicy and delicious
shredded chicken is now ready.
