🧂 Ingredients
2 cups long-grain parboiled
2 cups tomato sauce-
1 large onion, finely chopped
1 bell pepper finely chopped
3 cloves garlic, minced
1 teaspoon ginger minced
1 teaspoon smoked paprika-
1 teaspoon ground cayenne pepper (adjust to taste)
1 teaspoon thyme
1 teaspoon curry powder
4 cups chicken or vegetable broth
1/4 cup vegetable oil
Salt and pepper to taste- Optional
cooked meat or seafood (chicken, shrimp, or fish)

In a large pot, heat the vegetable oil over medium heat. Add the chopped onions,
bell pepper, garlic, and ginger. Sauté until the onions are translucent and the
vegetables are softened..

Add the tomato sauce to the pot and stir well. Cook for about 5-7 minutes to
allow the flavors to meld

Stir in the smoked paprika, cayenne pepper, thyme, curry powder, salt, and
pepper. Adjust the seasonings according to your taste preferences.

Add the parboiled rice to the pot and stir until it is well coated with the
tomato and spice mixture

Pour in the chicken or vegetable broth and bring the mixture to a boil. Once
boiling, reduce the heat to low, cover the pot, and let the rice simmer for
about 25-30 minutes, or until the rice is cooked and the liquid is absorbed. If
using cooked meat or seafood, you can add it to the pot at this stage

Once the rice is cooked, fluff it gently with a fork and let it sit covered for
a few minutes to steam.

Serve the Liberian Jollof Rice hot, garnished with additional chopped vegetables
if desired. It's delicious on its own or paired with fried plantains, coleslaw,
or a fresh salad.
