Tteokbokki (Korean Spicy Rice Cakes)

Instructions

1 Start bringing some water to a boil in a saucepan. This will be used later to
partly cook the dried ramen noodles.
2 Bring the dried anchovy and dashima broth to a simmer in a large skillet.
3 Stir in the tteokbokki sauce ingredients.
4 Add the rice cakes and let them simmer for about 5 minutes. Stir occasionally to
prevent the rice cakes from sticking to the bottom of the pan.
5 Add the vegetables (except the green onions), and fish cakes. Let it simmer for
about another 6 minutes.
6 Cook the ramen noodles for about a minute in the saucepan with the boiling
water. Drain the water and add the noodles to the skillet with the tteokbokki.
7 Let the tteokbokki simmer for about another 1-2 minutes or until the sauce
reduces and somewhat thickens.
8 Garnish with sesame seeds and optional soft-boiled egg. Serve immediately.
