Low carb, vegan & amazingly tasty cauliflower mac & cheese!

Instructions

1 Simmer potatoes in salted water till tender, about 10 minutes.
2 Drain & blend in Vitamix with garlic, cashews, vinegar, nutritional yeast, onion
powder, salt, olive oil, and water.
3 Blend until smooth. Add chipotle pepper or smoked paprika if desired.
4 After making the cheese, add garlic, salt, smoked paprika & cayenne.
5 Boil cauliflower florets 5 minutes. Drain & put into baking dish.
6 Stir in cheese sauce.
7 Top with panko.
8 Broil 2 minutes until topping is lightly browned.
