Recipe for Cream of Mushroom Soup

Mushroom Soup is something I’ve enjoyed at almost all Buffets I’ve been too. And now I sit to  wonder why is this soup so commonly served?? If you know the answer, please feel free to write to me:) And No, I'm not complaining,  I just love that soup. My love for Mushrooms started when Dad used to get it in some form or the other from his Hotel. He worked in the Engineering department in the Hospitality Industry, so don’t worry nothing related to food! hahah He never ate at his workplace stating he was fedup of the 'rich' food. So, he would get his share of food home, and it used to be Party time for us kids and all the kids in the building. We would be awake till 11 pm only to see what “Jack uncle” has brought. I still remember when Dad would go to work, “Bye Dada, Get haan” would be our bukkad voices saying Bye to Dad! I’m sure any other child would say Have a nice day or take care hahahahaha But No! Mom has never cooked Mushrooms at home. It was never part of our Traditional cooking plus it used to be considered “Exotic” and overly expensive back in the day(and even now I guess) when it just started hitting the markets. So, I never got a chance to really experiment with Mushrooms. But now as and when I get a chance, I like trying out something or the other. I was feeling a bit off and the doctor said I need to eat bland food and honestly I have no appetite for too much “Masala” suddenly. I hope it’s only temporary though! I saw Mushrooms in the fridge and some leftover cream from making Ganache last month. So, I just thought of the “Buffet Soup” and tried something out and it tasted so good and pretty close to the “Buffet Soup”. Here’s what I did
