Stuffed Pepper Soup

This stuffed pepper soup is made with all the delicious flavors of traditional
stuffed peppers served in a comforting soup that the whole family is sure to
love.

Instructions

1 First, heat the oil in a large pot and add the chopped onion and bell peppers.
Lightly season them with salt and pepper and sauté them until they begin to get
soft.
2 Add the ground beef, sausage and garlic. Break the meat into small pieces with a
wooden spoon or spatula and cook it until the meat has browned and cooked all
the way through. (drain the fat if necessary)
3 Stir in the tomato paste, and add the whole can of diced tomatoes (including the
juice) and beef broth.
4 Raise the heat until the liquid begins to gently boil and season it with salt,
pepper, Italian seasoning and garlic powder.
5 Add the rice and turn the heat low and give everything a nice big stir. Put the
lid on and let the rice cook until its soft and ready to eat. This should take
about 5 minutes
6 Finally, stir in the Parmesan cheese, serve warm and enjoy!
