diced potato
4 tbsp
olive oil
3 1/2 oz
chopped onion
1/4 clove
chopped garlic
1/2 oz
chopped green pimento
1/2 oz
diced tomato flesh

beaten and seasoned eggs
1 oz
butter or oil
melted butter

Instructions

Golden fry 1 oz diced potato in 4 tbsp olive oil, drain, season and retain.

Lightly fry 3 1/2 oz chopped onion, 1/4 clove chopped garlic, 1/2 oz chopped
green pimento and 1/2 oz diced tomato flesh in the same pan.

Add to the beaten eggs and make into a flat omelette, slide onto a plate and
serve.
