Easy Marry Me Chicken Meatballs (Lightened Up)

🧂 Ingredients

• 1 lb Ground chicken
• 1/3 cup Breadcrumbs
• 1/4 cup Grated parmesan cheese
• 1 small Egg
• 2 Garlic cloves
• 1/2 tsp Salt
• 1/4 tsp Black pepper
• 2 tbsp Olive Oil
• 1 medium onion

  diced
• 3 Garlic cloves

  minced
• 3/4 cup Chicken broth
• 1/2 cup Cottage cheese

  blended
• 1/4 cup Sun-dried tomatoes

  chopped
• 1/4 cup Grated parmesan cheese
• 1 tbsp Tomato paste
• 1 tsp Thyme
• 2 cups Frozen spinach

  or fresh
• Salt and Pepper

  to taste
• Pasta water to thin

Instructions

• 1 Prepare the Meatballs: In a bowl, combine ground chicken, breadcrumbs, Parmesan,
  egg, garlic, thyme, salt, and pepper. Mix until just combined.
• 2 Brown the Meatballs: Roll into 15–18 meatballs and brown them in a skillet over
  medium heat with olive oil. Once browned, turn down the heat, and remove the
  meatballs from the skillet.
• 3 Chop onion into small diced uniform sizes.
• 4 Add Aromatics: In the same skillet over medium heat, add onion and saute until
  translucent. Add garlic and sauté for 1 minute until fragrant.
• 5 Add chicken broth, blended cottage cheese, sun-dried tomatoes, Parmesan, tomato
  paste, and thyme. Simmer for 5 minutes, stirring occasionally, until the sauce
  thickens.
• 6 Add the Spinach: Stir in the spinach and cook until wilted. Adjust seasoning
  with salt and pepper as needed.
• 7 Combine: Return the meatballs to the skillet and coat them in the sauce. Let
  simmer for 5-10 minutes to meld the flavors. Use a meat thermometer to ensure
  that the meatbals are cooked to an internal temperature of 165 degrees F.
• 8 Serve: Garnish with extra Parmesan and fresh basil or parsley. Serve over pasta,
  mashed potatoes, or rice.
