Instructions

1 In a bowl mix the chicken, oregano, salt, lime and garlic.
2 Marinate for at least 30 minutes or overnight.
3 In a skillet heat the oil over medium heat.
4 Add the chicken (reserve all the other things in the marinade) and sauté until
the meat is a bit browned.
5 Add onions, olives, peppers and tomato sauce. Cover and simmer over low to
medium heat for 15 minutes, stirring and adding water by the tablespoon as it
becomes necessary.
6 Simmer until the vegetables are cooked through.
7 Add fresh cilantro. Season with salt and pepper to taste. Serve with white rice,
and salad.
