Garlicky Golden Beet Turmeric Hummus

🧂 Ingredients

elephant garlic bulb
Extra virgin olive oil
2 cups
peeled and sliced golden bets
Kosher salt and freshly ground pepper to taste
1 15.5 oz can
chickpeas*
2 tablespoons
tahini
3 teaspoons
turmeric

Instructions

Preheat the oven to 350F.

Slice the top off of the garlic.

Wrap in aluminum foil and pour a generous amount of olive oil over the top.

Seal the foil and place it in the oven.

Spread the sliced beets out on a parchment-lined baking sheet.

Coat with olive oil.

Season with Kosher salt and freshly ground pepper.

Place in the oven for 15 minutes after the garlic and roast for 40 minutes until
tender.

Remove from oven and let cool.

When the garlic has softened, remove from the oven.

Let cool and squeeze the cloves out of the bulb.

Reserve the oil in the foil.

Blend the chickpeas, tahini, beets, and garlic.

Pulse in the turmeric.

Slowly drizzle in the reserved oil plus 1 tablespoon olive oil.

If the mixture is still too thick, add water 1 tablespoon at a time until it
smooths out.

Season with Kosher salt and freshly ground pepper. to taste.

Transfer to a bowl and serve with pita chips.
