🧂 Ingredients

3 large eggs lightly beaten
1/4 cup all purpose flour
4 cod fish fillets
1 lemon quartered
1 tsp. salt
1/4 tsp. black pepper
1 cup panko crumbs
1/2 cup parmesan cheese

parmesan reggiano or pecorino romano cheese work best

Instructions

1 Preheat your oven to 400 degrees F (200 degrees C). Spray the sheet pan with
cooking spray and set aside.

Pat the cod fillets dry with paper towels and set aside

Sprinkle the cod fillets with 1 teaspoon salt and 1/4 teaspoon pepper set aside

Add the flour to a dish and cover the cod fillets completely. Shaking any extra
flour off

Dip each cod fillet into the eggs to coat and remove excess

In a dish mix together the panko breadcrumbs and Parmesan cheese

Dip each cod fillet into the panko mixture, pressing the crumbs onto the top of
the fish to ensure it sticks.

Place the prepared fish fillets onto the prepared baking sheet. Spray the top of
the fish with cooking spray to help the coating turn golden brown and crisp.

Bake the cod in the preheated oven for 20-25 minutes, or until the crust is
golden brown and crispy. The fish will be flaky when cooked through.

Remove the fish from the oven and drizzle and serve with lemon wedges on the
side.
