Hot Chocolate Pancakes

This is one for all the pancake lovers out there - a pure indulgence.

🧂 Ingredients

1 1. Make pancake batter by mixing all the ingredients (except chocolate) in a
bowl until smooth
2 2. Preheat a non-stick fry pan on low flame and lightly grease with coconut oil
3 3. Place lightly greased cookie cutters onto the fry pan and spoon 1/2 tbsp of
batter into each cutter - layer should be really thin
4 4. Add 4-5 squares of chocolate in the middle of each pancake before spooning
more batter around the chocolate
5 5. Cook on a low heat with lid on for 3-4 minutes or until the base is golden
brown
6 6. Carefully flip the pancakes and allow to cook for a further 2-3 minutes
7 7. Remove from the pan and gently remove the cookie cutter, enjoy!
